Sage and Lemon Balm Chicken
Serves about 3
- 2 pounds chicken pieces
- 1/4 cup extra virgin olive oil
- 2 tablespoons of butter (we use real butter)
- 4 tablespoons of chopped or small leaf lemon balm
- 3 tablespoons chopped fresh sage
- 1 clove garlic, crushed and chopped
- 3/4 teaspoon salt (reduce to 1/4 teaspoon if using sodium-containing chicken)
- 1/2 teaspoon ground black pepper

Thaw chicken and roll in seasons, cook in medium sauce pan over oil and a bed of sage and thyme
