Dips from the Garden!
Fresh Tomato Hummus
As many chickpeas that fit into a food processor
2 ripe tomatoes (red preferably)
2 cloves garlic
Olive Oil/ Water/ Lemon juice
Salt
Basil
Let chickpeas soak over night if using dried beans. Once beans are ready place them in boiling water until the skins start to come off. From there place them in your food processor and begin to puree. While this is going on feel free to add oil and/or water to the mixture to keep the hummus moist and the chickpeas stirring. Once the mixture is ready (have all the chickpeas mixed but make sure it is not too watery because they need to be pureed longer), begin to add chopped tomatoes, basil, garlic, and salt as needed. Once all ingredients are mixed and the consistency and taste are to your liking, your hummus is ready!!
